The sun shines again over the Colosseum in Rome. After three months of closure due to the pandemic, Aroma, the 1 Michelin star restaurant located on the terrace of Palazzo Manfredi in Rome led by the executive Chef Giuseppe Di Iorio , returns with a whole new menu.
Starting 10 June, 2020, the extraordinary open air location that enjoys an enchanting panoramic view facing one of the most known and recognizable monuments in the world, will return to accompany the evenings of the Romans and beyond.
“There is no innovation without tradition” is the motto of chef Di Iorio and it is no coincidence that the two new menus are called Ionic and Corinthian, like the architectural styles of classical temples. Two gastronomic itineraries that tell the best raw material combined with the creativity and passion of the Roman chef.
On the Menu
The dishes of chef Di Iorio will be accompanied as always by the wine pairings by Sommelier Alessandro Crognale who will offer a selection from the 800 labels available at the restaurant. Not only tasting but also a smarter option with the possibility of choosing only two courses plus a dessert. From the Maltagliati with monkfish, salicornia and pine nuts with wild fennel , from the Corinthian menu, to the Fassona tartare with wild herbs, puffed black rice and apple gel (all the herbs used in the Aroma cuisine are grown on the restaurant terraces) of the Ionic menu, the whole offer is a journey inside the varied and rich Italian peninsula and its thousand products.
